Chop up onion, add coconut oil to a large pot and fry the onion until soft then add in laksa paste and combined.
Add in water, coconut milk, vegetable stock cube and bring to a light simmer.
Add in vegetables and let cook for about 10- 15 mins (depending on how soft you like them).
In a separate saucepan, bring water to boil and add in noodles, cook for 3-5 mins or until soft and drain the water out.
When you are ready to serve, use a large serving spoon to scoop out laksa in a bowl, add the noodles, garnish and enjoy!
